It’s a new year and at #CasaMarcela we couldn’t be happier. This salmon is the perfect transition into eating healthier and saying good bye to holiday festivities. Apart from being healthy this recipe is as easy as it gets. Literally throw all the ingredients into the foil, wrap it up, grill it and serve. Enjoy! Hasta la próxima! Marla
Grilled Fennel Salmon
- 4 (6-ounce) salmon fillets, skinless
- 2 cups quartered grape tomatoes
- 2 cups diced zucchini
- 1 cup diced baby potatoes
- 1/2 yellow onion, sliced
- 1/2 cup freshly squeezed lemon juice
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- Olive oil
- Fresh fennel fronds, for garnish
Drizzle salmon fillets with olive oil and season with salt and pepper. Place each seasoned salmon on a piece of foil large enough to fold over and seal. Add about 2 tablespoons of lemon juice to each fillet. Top salmon with tomatoes, zucchini, potatoes and onion. Season vegetables with salt and pepper. Wrap up salmon tightly in the foil packets.
Heat a grill pan over medium-heat. Place foil packets on hot grill and cook for about 15 minutes. Serve in the foil packets and garnish with fennel fronds.
