Growing up in Mexico as soon as the weather heated up a bit you would start noticing a lot more paleteros passing by your home or local park. Paleteros are what we call in Mexico our ice cream man but instead of selling ice cream they sell popsicles in all different shapes and colors.  They can be seen pushing around their popsicle cart while ringing a little bell to let those who are near know that the paletero has arrived. Living in the states you don’t get to see a paletero man too often so in honor of the paletero, Marcela decided to channel her inner paletero man and bring some homemade paletas to her loved ones. After all she is always looking for ways to bring pieces of Mexico into her home. This Cucumber Chamoy Paleta has the perfect blend of flavors as chamoy and chili pair superbly well with the fresh crisp flavors of cucumber. For those who have never heard of chamoy, chamoy is a fruity and savory hot sauce made from pickled fruits, it can be found ready to buy at your local Hispanic market or online.  These paletas are the ideal treat to keep you cool during those hot summer days and if you are watching your sugar intake you can always swap for a natural sweetener like agave nectar or stevia. Cucumber Chamoy PaletasServes 10

Ingredients:

  • 4 cups cucumber, peeled and diced
  • 2 cups water
  • 1 1/2 cups sugar
  • Tajin chili powder
  • Chamoy sauce

Directions:

Combine cucumber, water and sugar in a blender. Blend until mixture is smooth. Using a mesh strainer, strain the mixture in order to only get the juice with no pulp. Pour mixture into popsicle mold. Freeze for about 3 hours.

Remove paletas form mold and sprinkle with chili powder first and then chamoy. Sprinkling the chili powder first first will help the chamoy stick stick to the paleta instead of just sliding off. Add more chili powder on top of the chamoy and enjoy!
