It's a new year and at #CasaMarcela we couldn't be happier. This salmon is the perfect transition into eating healthier and saying good bye to holiday festivities. Grilled Fennel Salmon
Ingredients
- 4 (6-ounce) salmon fillets, skinless
- 2 cups quartered grape tomatoes
- 2 cups diced zucchini
- 1 cup diced baby potatoes
- 1/2 yellow onion, sliced
- 1/2 cup freshly squeezed lemon juice
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- Olive oil
- Fresh fennel fronds, for garnish
Directions
Drizzle salmon fillets with olive oil and season with salt and pepper. Place each seasoned salmon on a piece of foil large enough to fold over and seal. Add about 2 tablespoons of lemon juice to each fillet. Top salmon with tomatoes, zucchini, potatoes and onion. Season vegetables with salt and pepper. Wrap up salmon tightly in the foil packets.
Heat a grill pan over medium-heat. Place foil packets on hot grill and cook for about 15 minutes. Serve in the foil packets and garnish with fennel fronds.
