The official countdown to summer has begun and we are thrilled to share this summer salad with you. After all summer is the best season for watermelon so we couldn’t help but make this the main ingredient in the salad. The combination of balsamic vinegar, watermelon, feta cheese and chiles serranos are just perfect. If you have little ones or those who are not crazy for chile you can simply skip that ingredient. It’s a great salad for those barbecues that will be coming up or you can also make it your salad for a day at the beach. This salad is so versatile that it is perfect for any occasion. Watermelon Feta Serrano Salad

Ingredients:

  • 1/2 serrano, seeded, deveined and minced
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons balsamic vinegar
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon agave nectar
  • Kosher salt, to taste
  • Fresh ground pepper, to taste
  • 3 cups crumbled feta cheese
  • 2 avocados, cubed
  • 1 serrano, thinly sliced
  • 4 cups cubed watermelon
  • Arugula

Directions:

In a small bowl combine minced serrano chile, lemon juice, balsamic vinegar, olive oil and agave nectar. Mix ingredients until combined. Season with salt and pepper to taste. In a large bowl add feta cheese, avocados, serrano slices and watermelon. Add dressing and toss. Serve over a bed of arugula and serve family style.
