One of my favorite things when coming into work is walking into this gorgeous home and seeing all the beautiful lavender that grows wild in Marcela’s front yard. I have a slight obsession with lavender not just with its smell but its taste too so you can imagine how in love I am with this syrup along with anyone else who has tried it. Marcela combines her lavender with piloncillo to make a lovely syrup which is also used in her buñuelos recipe that can be found in her newest cook book, Casa Marcela. In #CasaMarcela you can always find freshly squeezed lemonade in the refrigerator and well she felt inspired to give that lemonade an upgrade. When paired together you get a refreshing, calming and soothing drink that will make anyone smile. It’s a perfect non-alcoholic drink but I must be real with you and admit that a hint of gin might convert this into a perfect afternoon cocktail. The options are endless, so enjoy!

Lavender Piloncillo Lemonade

Ingredients:

  • 10 fresh lavender flowers
  • 1 (7 1/2-ounce) piloncillo cone
  • 2 cups filtered water
  • Peel of 1/2 orange (not just the zest)
  • 1 cup freshly squeezed lemon juice
  • Fresh lavender, for garnish

Directions:

In a heavy saucepan, combine the lavender flowers, piloncillo, and a cup of water and bring to a boil over high heat. Once the piloncillo is completely dissolved, decrease to low. Add the orange peel and let infuse over low heat for at least an hour. Strain and cool to room temperature before using.

In a pitcher combine lemon juice with remaining water. Add lavender piloncillo syrup, to taste, to lemonade. Serve over ice in cups and enjoy!
