Passion Fruit Mezcalitas

Ingredients

  • 1 cup sugar
  • 3 cups water
  • 1/4 cup lime juice
  • 1 1/2 cup fresh passion fruit pulp
  • Salt, for rim
  • Chili powder, for rim
  • Lime wedge, for rim
  • 8 ounces Mezcal
  • Ice 
  • Simple syrup, to taste
  • Passion fruit flower, for garnish

Directions

In a small saucepan combine sugar and 1 cup of water. Bring to a boil. Remove from heat and let cool completely. 

Combine remaining water, lime juice and pulp. Blend until combined. Strain water through a fine mesh strainer in case pulp had seeds. Refrigerate passion fruit water until ready to serve. In a small plate combine salt and chili powder. Use a lime wedge to wet the rim of the glass and dip in chili salt mix. Serve agua fresca with 2 ounces of mezcal for each glass over ice. Add simple syrup to taste. Garnish with a passion fruit flower and enjoy!
