Flamed Shrimp Chipotle Tostadas

Ingredients

  • 3 whole adobo chipotles (canned)
  • 1/2 cup of sour cream
  • 1/4 cup of milk
  • 1 teaspoon of garlic powder
  • 1 pinch salt
  • 1 pinch coarse ground pepper
  • 1 tablespoon olive oil
  • 2 pounds raw, peeled shrimp
  • 1/4 onion, finely chopped
  • 2 garlic cloves, minced
  • 3 tablespoons butter
  • 1/4 cup tequila, for flambeing
  • Tostadas
  • Chopped cilantro, for garnish

Directions

In a blender combine chipotle, sour cream, milk, garlic powder, salt, pepper, and oliveoil. Blend until ingredients are combined. You can always add more peppers for a hottersauce. Set aside for later.

In a large skillet on medium high heat, melt butter. When butter has melted add onionand garlic and sautee until onion has become translucent. Season shrimp with salt andpepper and add to the skillet. Cook for about 3-5 min until they start changing color (apinkish tone). Season with salt and pepper. Add the tequila to the skillet. Tilt the panslightly over the burner to ignite the tequila and cook until the flames subside. When theflames have cooled down. Return skillet to medium high heat and add chipotle cream.Let sauce simmer. Place shrimp on tostada, and garnish with cilantro and enjoy!
